1/2 onion 2 small or 1 large zucchini 1 small carrot 2 Tbsp olive oil 2 cans chicken broth 1 can coconut milk curry powder garlic powder thyme sage salt pepper chop onion and put in pan w/ olive oil and saute a bit. shake a bunch of curry powder on. add chopped carrot. saute a bit more. add chopped zucchini, saute just a minute. add chicken broth and coconut milk, garlic powder, salt, black pepper, thyme, sage, and more curry powder to taste. simmer until veggies are cooked through.
